Have I Mentioned How Much I Like Food?

I'm an eater. Hard core, serious, lots of food all the time eater. I am a fan of all things tasty, and there isn't much out there that I don't like.

At the end of the day, however, I love coming home to some good old comfort food. A big pot of chili on a Sunday. Homemade potato soup. A loaf of bread fresh from the oven. I am the Starch Queen - I can eat a meal where every one of my sides is a starch, and it makes me the happiest girl on the planet. Last night, my husband roasted a chicken, which we paired up with herbed stuffing and rosemary potatoes. Marvelous.

That also meant that I had a fair amount of chicken remaining. (We lovingly refer to it as the chicken carcass. Not exactly tasty-sounding, but, well, it's the chicken carcass!) As I stood in my kitchen this afternoon, pondering tonight's dinner, I decided to make some stock. Tomorrow- chicken and dumplings. From scratch.

Now, please understand that I CAN cook, but I don't very often. My husband enjoys cooking everyday stuff. I love to COOK. You want a Thanksgiving meal for 25? I gotcha covered. Cooking out for 12? Let me pull out my grill. I cook to feed the masses. He cooks to feed, well, us!

(Please note that cooking and baking are two different things in my world. I will bake endlessly. Usually it's more than enough for the masses as well!)

You might have noticed that the dumplings will be for tomorrow. And I decided on that while trying to figure out what to have tonight. Yeah, hubby came to the rescue there. We had taco night. He worked on that while I chopped up celery, sliced up carrots, picked through my spices. I am now sitting here at the table, the smells of the fresh homemade stock washing over me. And I think I just drooled a little on my keyboard.

Are you a comfort food sort of person, or do you tend to eat with a closer eye on the health and nutrition aspects? Have you found a good balance? Pass the platter on over here and tell me about it!

  1. I am a comfort food, meat & 3, good old fashioned home cookin' type of gal (with the waistline to prove it) My husband is more of the creative cooker. You know, dash of this, dice this...oh, look it's gumbo!

  2. I also am a comfort food girl. Good southern food at that. I do try to throw in a baked chicken and steamed veggies as often as possible. But how can you say no to a pot of homemade chicken n dumplins?!
